Rustic Pear Almond Cake

  • 2-3 ripe pears
  • 1/2 cup plus 1 tablespoon room-temperature butter

  • 2 large eggs
  • 2 cups wheat flour

  • 1 packet (16g) baking powder
  • Optional: A splash of milk if the dough is too dry

Instructions:

  1. Preheat your oven to 170°C (338°F) with the fan setting on. Grease a 26 cm diameter baking pan and dust it with sugar.
  2. Cream the butter and sugar together until fluffy. Beat in the eggs one at a time.
  3. Mix the flour, ground almonds, and baking powder in a separate bowl. Gradually combine with the butter mixture. Add a little milk if the dough seems dry.
  4. Peel, core, and slice the pears thinly.
  5. Spread the dough into the prepared pan. Smooth the surface, dampening your hands to help if the dough is sticky.
  6. Press the pear slices into the dough, then sprinkle with blanched almonds.
  7. Bake for approximately 30 minutes, or until golden and a tester comes out clean.
  8. Cool the cake in the pan, then dust with powdered sugar when ready to serve.
