Ingredients:

  • 115g unsalted butter, melted
  • 150g light brown sugar
  • 115g granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 180g plain flour
  • 1/2 tsp bicarbonate of soda
  • 1 tsp salt
  • 200g chocolate chips

Instructions:

  1. Mix melted butter with both sugars. Blend in the egg and vanilla.
  2. Combine flour, bicarbonate of soda, and salt. Add to the wet mixture.
  3. Fold in chocolate chips.
  4. Chill the dough for at least 30 minutes.
  5. Roll into balls and bake at 160°C (fan) for 8-10 minutes.
  6. The cookies will be puffy out of the oven but will flatten as they cool.
  7. Cool for at least 15 minutes on the baking tray before serving.

Makes 20-24 cookies.
