Ingredients
For the Cookie Dough:
- Half-batch of homemade vegan apple curd (see notes for recipe)
- 200g granulated sugar
- 115g vegan block-style butter, melted and cooled
- 20g vegan Greek-style yogurt or any plant-based yogurt
- 1 teaspoon vanilla extract
- 220g all-purpose flour
- ½ teaspoon each baking powder and baking soda
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ teaspoon sea salt
For the Crumble Topping:
- 25g brown sugar
- 15g all-purpose flour
- 20g rolled oats
- ½ teaspoon cinnamon
- 2 tablespoons vegan butter, melted and cooled
For the Icing:
- 80ml apple cider vinegar or apple juice, reduced to 2 tablespoons
- 1 tablespoon non-dairy milk
- 1 teaspoon vanilla extract
- 150g powdered sugar
Instructions
- Whisk together the melted butter and sugar. Incorporate the apple curd, yogurt, and vanilla. Combine the dry ingredients separately and then fold into the wet mixture. Chill the dough for 30 minutes.
- For the crumble, mix all the dry ingredients and then incorporate the melted butter. Refrigerate.
- Preheat the oven to 180°C (356°F) and line baking trays with parchment.
- Prepare the icing by reducing the apple cider vinegar, then whisking in milk, vanilla, and powdered sugar until smooth.
- Scoop the dough onto the trays, flatten slightly, and create an indentation in the center of each. Fill with apple curd and seal with dough. Top with crumble.
- Bake for 12-14 minutes, then cool on a wire rack.
- Once cool, drizzle or pipe the icing over the cookies.
