Ingredients:

  • Roux:
    • 14g bread flour
    • 43g whole milk
    • 43g water
  • Dough:
    • 298g bread flour
    • 50g sugar
    • 18g milk powder
    • 1 tbsp instant yeast
    • 1 tsp salt
    • 57g butter, melted
    • 113g whole milk
    • 1 egg
  • Filling:
    • 60g butter, softened
    • 1/2 cup soft brown sugar
    • 1/2 tbsp cinnamon
    • 3 tbsps granulated sugar
  • Caramel Sauce:
    • 200g sugar
    • 90g unsalted butter, room temperature
    • 1/2 cup cream
    • 1/2 tsp fine sea salt
    • Roasted pecans, as needed

Instructions:

  1. Prepare the Roux:
    • In a saucepan, whisk together the roux ingredients until a paste forms. Set aside.
  2. Make the Dough:
    • Combine all dough ingredients in a bowl with a dough hook attachment.
    • Add the roux and knead on high speed for 6-7 minutes.
    • The dough will be sticky. Oil your hands, form it into a ball, and let it proof for 1 hour and 15 minutes.
  3. Prepare the Rolls:
    • Roll out the proofed dough and spread softened butter on top.
    • Mix brown sugar, cinnamon, and granulated sugar. Sprinkle over the butter.
    • Roll the dough into a log, cut into 6 pieces, and place in a parchment-lined pan.
    • Let them proof for another 50 minutes.
  4. Prepare the Caramel Sauce:
    • Melt sugar in a pan, then add butter and cream, stirring continuously. Add salt, stir, and set aside.
  5. Bake:
    • Preheat the oven to 170°C.
    • Pour some caramel sauce into a 22cm x 30cm pan. Add roasted pecans and top with the cinnamon rolls.
    • Bake for 20-25 minutes.
  6. Serve:
    • Flip the pan onto a plate to serve the caramel pecan cinnamon rolls.
