Ingredients:

For the Cake Layers:

  • 6 egg whites
  • 100g sugar
  • 90g flour
  • 130g chocolate, grated
  • 10g baking powder

For the Cream:

  • 6 egg yolks
  • 100g sugar
  • 600ml milk
  • 50g cornstarch
  • Vanilla sugar
  • 100g butter

For the Glaze:

  • 100g chocolate
  • 2 tbsp unsalted butter

For the Syrup:

  • 100ml water
  • 2 tbsp condensed milk

Instructions:

  1. Preheat your oven to 180°C. Beat the egg whites until foamy, then gradually add sugar, continuing to beat until stiff peaks form. Gently fold in the flour, baking powder, and grated chocolate. Pour the batter onto a parchment-lined baking tray and bake for about 10 minutes.
  2. For the cream, in a saucepan, whisk together the egg yolks, sugar, milk, cornstarch, and vanilla sugar until smooth. Cook over medium heat, stirring constantly until the mixture thickens. Cover with plastic wrap touching the surface of the cream and let it cool.
  3. Once cooled, beat the butter until light and fluffy. Gradually combine the butter with the cooled cream mixture, beating until smooth and creamy.
  4. Cut the cake into three equal layers. Soak each layer with the syrup (mix of water and condensed milk), then spread the cream evenly over each layer. Chill the assembled cake in the refrigerator for an hour.
  5. For the glaze, melt the chocolate and butter together. Pour over the chilled cake for a glossy finish.
