Ingredients:

Filling:

  • 100g Mango Puree
  • 40g Passion Fruit Puree
  • 35g Sugar
  • 10g Cornstarch

Cream:

  • 250g Mascarpone
  • 100g Cottage Cheese
  • 40g 33% Cream
  • 60g Coconut Cream
  • 55g Icing Sugar
  • Vanilla to taste

Instructions:

  1. Filling:
    • Mix the sugar and cornstarch together.
    • Combine the fruit purees and warm them slightly. Gradually add the cornstarch and sugar mixture, stirring continuously.
    • Cook for 1-2 minutes after boiling. Allow to cool.
  2. Cream:
    • In a mixer, whip all the cold ingredients together until they reach a firm consistency.
  3. Assembly:
    • Assemble the cake with alternate layers of sponge cake (recipe in the previous post), tropical filling, and cream.
