Twisted Cinnamon Roll Braids

Ingredients:

  • 300g bread flour
  • 5g salt
  • 100g butter, room temperature
  • 100g milk

  • 55g butter, room temperature
  • 4 tsp ground cinnamon
  • 100g dark brown sugar

Instructions:

  1. In a mixing bowl, combine the bread flour, salt, room temperature butter, egg, milk, yeast, and sugar. Mix by hand until a rough dough forms. Work in the softened butter.
  2. Knead the mixture for about 10 minutes until it becomes a smooth dough ball.
  3. Cover the dough and let it rest in a warm place for 1 hour to rise.
  4. For the filling, mix the room temperature butter, cinnamon, and dark brown sugar in a small bowl until a paste forms.
  5. After the dough has risen, roll it out into a large rectangle on a floured surface. Evenly spread the cinnamon-sugar paste over the dough.
  6. Fold the dough in thirds: bring one end to two-thirds of the way across, then fold the remaining third over it, like folding a letter. Press down gently to remove any air bubbles.
  7. Cut the dough into 6 even strips.
  8. Take one strip and cut it into three lengths, but not completely apart at one end, so it’s still connected. Braid the three pieces and then roll the braid into a swirl, tucking the end underneath. Repeat with the remaining strips.
  9. Place each braided bun into a greased muffin tin.
  10. Cover the muffin tin with plastic wrap and let the braids proof in a warm place for an hour until puffy.
  11. Preheat the oven to 350°F (175°C). Brush each bun with egg wash.
  12. Bake the buns for 15-20 minutes until they are golden brown.
  13. Remove the buns from the oven and allow them to cool.
