Ingredients:

For the Cake:

  • 360ml dairy-free milk
  • 2 tsp apple cider vinegar
  • 3 large ripe bananas, mashed
  • 360g self-rising flour
  • 1 tsp baking powder
  • 1/4 tsp bicarbonate soda
  • 1 tsp ground cinnamon
  • 100g light olive oil
  • 150g light brown sugar
  • 100g dairy-free yogurt

For the Toffee Sauce:

  • 150g nut butter
  • 60g maple syrup
  • 2 tbsp coconut oil, melted

For the Frosting:

  • 227g dairy-free butter, softened
  • 420g powdered sugar
  • 3 tbsp dairy-free milk
  • 1/2 tsp vanilla bean extract

Instructions:

  1. Prepare the Cake Batter:
    • Preheat your oven to 170°C (338°F) with a fan setting.
    • Line three 6-inch cake tins with parchment paper.
    • In a large mixing bowl, combine the dairy-free milk and apple cider vinegar. Let it sit for a few minutes to curdle.
    • Mash the bananas in a separate bowl and add them to the milk mixture along with the light olive oil, light brown sugar, and dairy-free yogurt. Mix well.
    • Sift in the self-rising flour, baking powder, bicarbonate soda, and ground cinnamon into the wet ingredients.
    • Mix until just combined, being careful not to overmix.
  2. Bake the Cakes:
    • Divide the batter evenly among the three prepared cake tins.
    • Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
    • Allow the cakes to cool in the tins for a few minutes, then transfer to a wire rack to cool completely.
  3. Prepare the Toffee Sauce:
    • In a small mixing bowl, combine the nut butter, maple syrup, and melted coconut oil. Stir until smooth and well combined.
  4. Prepare the Frosting:
    • In a large mixing bowl, beat the softened dairy-free butter with a hand mixer on medium-high speed until creamy and light.
    • Gradually add the powdered sugar, a little at a time, while continuing to mix on low speed.
    • Add the dairy-free milk and vanilla bean extract, and mix on high speed until the frosting is fluffy and smooth.
  5. Assemble the Cake:
    • Place one cake layer on a serving plate and spread a generous amount of the toffee sauce over it.
    • Add a layer of frosting on top of the toffee sauce.
    • Repeat with the remaining cake layers.
    • Frost the top and sides of the cake with the remaining frosting.
