Vegan Chocolate Lotus Soufflé

Ingredients:

  • 250g dark chocolate
  • 75g white sugar
  • 75g brown sugar
  • 500ml soy milk
  • 100ml neutral oil
  • 220g all-purpose flour
  • 75g cocoa powder
  • 10g baking powder
  • 1/2 teaspoon of salt
  • A package of Lotus spread

Instructions:

  1. Melt the dark chocolate either over a double boiler or in the microwave in short bursts. Add both sugars and mix well.
  2. Let the melted chocolate cool down slightly.
  3. In a separate bowl, combine the soy milk, oil, and all the dry ingredients.
  4. Mix using a whisk or a mixer until the mixture is uniform.
  5. Add the melted chocolate mixture and continue mixing until smooth and well-combined.
  6. Line individual rings with parchment paper. Pour the soufflé batter into the rings, filling them up to 1/3. Add a spoonful of Lotus spread in the center of each and then top up with more batter until the rings are 3/4 full.
  7. Bake in a preheated oven at 180°C for about 10 minutes. The center should be slightly wobbly, with stable sides.
