  • Muffins:
    • 200g self-raising flour
    • 50g vegan vanilla protein powder
    • 1/2 tsp baking powder
    • 1 tsp bicarbonate of soda
    • 150g sugar
    • 2 tsp ground sweet cinnamon
    • 240g dairy-free milk mixed with 1 tsp vinegar
    • 65g dairy-free yogurt
    • 50g oil
    • 2 tsp vanilla bean paste
  • Crumble:
    • 100g pecan nuts, crushed
    • 2 tsp ground sweet cinnamon
    • 50g flour
    • 20g dairy-free butter
  • Cream Cheese Frosting:
    • 115g dairy-free butter, room temperature
    • 224g dairy-free cream cheese, room temperature
    • 100g powdered sugar, sifted
    • 60g vegan vanilla protein powder
  • Caramel sauce for topping

Method:

  1. Preheat the oven to 170°C (fan setting). Line a muffin tray with muffin cases.
  2. Mix dairy-free milk with vinegar and set aside to thicken. Then add in the other wet ingredients and mix.
  3. Gently incorporate the dry ingredients into the wet mixture.
  4. Pour the batter into the muffin cases.
  5. Prepare the crumble by mixing pecans, cinnamon, flour, and butter. Sprinkle over the muffins.
