  • 460g (3 ⅔ cups) all-purpose flour
  • 60g (⅓ cup) granulated sugar
  • 2 ¼ teaspoons instant yeast
  • 1 teaspoon sea salt

For the Pecan Caramel Topping:

  • 100g (3.53 oz) vegan block-style butter
  • 200g (1 cup) brown sugar
  • 60ml (¼ cup) pure maple syrup
  • 1 teaspoon vanilla extract
  • ½ teaspoon sea salt
  • 150g (1 ½ cups) pecans

For the Filling:

  • 60g (7 ½ tbsp) vegan block-style butter, softened
  • 60g (⅓ cup) brown sugar
  • 2 teaspoons ground cinnamon

Instructions

  1. Prepare vegan buttermilk and melt the vegan butter for the dough. Preheat your oven to 220°C (430°F) for roasting the sweet potatoes, then reduce to 175°C (350°F) for baking the buns.
  2. Mix the melted butter with vanilla into the buttermilk. Whisk together flour, sugar, yeast, and salt in a large bowl. Combine with the buttermilk mixture to form a dough and knead until smooth.
  3. Allow the dough to proof in a greased bowl covered with plastic wrap until doubled in size.
  4. For the topping, melt butter, brown sugar, maple syrup, vanilla, and salt. Spread in the base of a greased cake pan and sprinkle with pecans.
  5. Mix the softened butter, brown sugar, and cinnamon for the filling. Roll out the proofed dough, spread the filling on top, roll it up, and slice into buns.
  6. Place the buns over the pecan caramel in the pan and let them rise again until puffy.
  7. Bake until golden brown. Cool slightly, then flip onto a plate, allowing the caramel to coat the buns.
