Ingredients

For the Cookie Crust:

  • 160 g (5.64 oz) vegan graham crackers or cookies (digestives or ginger nuts)
  • 50 g (4 ⅓ tablespoons) vegan butter

For the Brownie Batter:

  • 2 flax eggs (milled flaxseed with water)
  • 120 g (4.2 oz) vegan dark chocolate
  • 100 g (3.5 oz) vegan block butter
  • 150 g (⅔ cup) soft brown sugar (or alternative sweetener)
  • 2 teaspoons vanilla extract
  • 70 ml (⅓ cup) non-dairy milk
  • 120 g (1 cup + 1 tbsp) ground almonds or almond flour
  • 60 g (⅔ cup) unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon sea salt
  • 100 g (½ cup) vegan chocolate chips
  • 90 g (3.2 oz) vegan marshmallows, cut if large

Instructions

  1. Prepare the Crust: Preheat the oven to 180°C (356°F) and line an 8″ square pan with parchment. Process graham crackers/cookies with vegan butter until sticky. Press into the base of the pan and refrigerate.
  2. Make Brownie Batter: Melt chocolate and vegan butter in a bain-marie. Combine flax eggs, sugar, vanilla, and milk with the melted mixture. Whisk ground almonds, cocoa powder, baking powder, and salt in a separate bowl. Fold wet ingredients into dry, then stir in ¾ of the chocolate chips.
  3. Assemble: Spread brownie batter over the crust. Press marshmallows into the batter and sprinkle remaining chocolate chips on top.
  4. Bake: Bake for 30-35 minutes until a toothpick comes out with few crumbs.
