Vegan Sticky Toffee Pudding

For the Pudding:

  • 200g pitted dates, roughly chopped
  • 200ml freshly boiled water
  • 1 tsp bicarbonate of soda
  • 100ml soya milk
  • 1 tbsp apple cider vinegar
  • 75g vegan butter (softened), plus extra for greasing
  • 2 tbsp black treacle
  • 50g dark muscovado sugar
  • 200g plain flour
  • 2 tsp baking powder

Instructions:

  1. Preheat your oven to 160°C (320°F) with a fan setting. Grease a 20cm ovenproof dish with vegan butter.
  2. Soak the dates in boiling water, add bicarbonate of soda, and stir. Let it soak for 30 minutes.
  3. Mix apple cider vinegar into the soya milk and let it curdle.
  4. In a bowl, beat softened butter and black treacle until soft. Add sugar and beat well.
  5. Gradually add flour and soya milk to form a smooth batter.
  6. Crush the soaked dates in the liquid, then stir into the batter.
  7. Pour the batter into the prepared dish and bake for 30-35 minutes until a skewer comes out clean.

For the Toffee Sauce:

  • 150g vegan butter
  • 300g dark muscovado sugar
  • 1 tbsp black treacle
  • 200ml vegan double cream (room temperature)

Sauce Instructions:

  1. Combine butter, sugar, and treacle in a pan. Heat until melted and combined.
  2. Stir in the vegan double cream and bring to a boil until it thickens, stirring regularly.
  3. Once the pudding is baked, pierce the surface with a skewer and pour 3/4 of the toffee sauce over it. Let it stand for 10 minutes.
