    • 1/4 cup vegan vanilla protein powder
    • ½ tsp baking soda
    • ½ cup white chocolate chips or chunks
  • Filling:
    • 6 tbsp biscoff spread, slightly melted
    • 150g dairy-free yogurt
    • 50g vegan vanilla protein powder

Method:

  1. Preheat the oven to 170°C and line two baking trays with parchment paper.
  2. In a stand mixer, whisk coconut sugar, flaxseed meal, almond milk, and coconut oil until creamy.
  3. Fold in almond flour, oat flour, protein powder, and baking soda to form a cookie dough.
