Ingredients:

For the Cake:

  • 4 eggs (room temperature)
  • 1 cup sugar
  • 2 cups flour

  • Pistachios (or walnuts/peanuts/hazelnuts)
  • White chocolate chips

Instructions:

  1. Whip eggs and sugar until light and creamy. Add water and oil, then dry ingredients. Gently fold using a spatula and bake in a preheated oven at 175°C.
  2. While the cake cools, whip milk and cream, and chill.
  3. For the cream, mix flour, cornstarch, and sugar. Gradually add milk, cook until thick, then add white chocolate and vanilla. Once cool, mix in cream.
  4. Slice the cake, soak with half the milk mixture, spread the cream, add chocolate and pistachios, and cover with the second layer of cake. Soak again, top with the remaining cream, sprinkle coconut, and refrigerate for 3-4 hours.
