Healthful Oat & Almond Cookies

Ingredients:

  • 2 tablespoons avocado oil
  • 1/4 cup almond butter
  • 25 g monk fruit sweetener
  • 30 g coconut sugar or brown sugar
  • 2 tablespoons almond milk
  • 1/2 teaspoon natural vanilla extract

For the dry mix:

  • 40 g ground almond meal
  • 50 g oat flour
  • A pinch of baking soda

  • 40 g of 70% cacao dark chocolate, roughly chopped

Instructions:

  1. Preheat your oven to 170°C (338°F).
  2. In a bowl, whisk together avocado oil, almond butter, monk fruit sweetener, coconut or brown sugar, almond milk, and vanilla extract until smooth.
  3. In another bowl, mix together almond meal, oat flour, and a pinch of baking soda.
  4. Gradually combine the wet and dry ingredients. Stir in the chopped dark chocolate.
