Apple Cheesecake Buns with Crumble Topping and Sweet Glaze

Soft yeast buns filled with creamy cheesecake and cinnamon apples, topped with a buttery crumble and finished with a vanilla glaze.

Ingredients
  

Dough:

  • ¾ cup 180 ml warm milk
  • teaspoons 1 packet active dry yeast
  • 3 tablespoons granulated sugar
  • cups 315 g all-purpose flour
  • ½ teaspoon salt
  • 1 large egg
  • ¼ cup 57 g unsalted butter, softened

Cheesecake Filling:

  • 6 oz 170 g cream cheese, softened
  • ¼ cup 30 g powdered sugar
  • 1 egg yolk
  • ½ teaspoon vanilla extract

Apple Topping:

  • 2 medium apples peeled and diced
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • Pinch of nutmeg
  • 1 teaspoon cornstarch
  • 1 tablespoon unsalted butter

Crumble Topping:

  • ¼ cup 30 g all-purpose flour
  • 2 tablespoons brown sugar
  • 2 tablespoons cold butter diced

Glaze:

  • ½ cup 60 g powdered sugar
  • 1 –2 tablespoons milk
  • ¼ teaspoon vanilla extract

Instructions
 

  • Make yeast dough and let rise until doubled.
  • Prepare apple topping, cheesecake filling, and crumble. Cool.
  • Divide dough, shape into rounds, press in centers.
  • Fill with cheesecake and apple. Top with crumble.
  • Let rise again, then bake at 350°F for 20–25 minutes.
  • Drizzle with glaze and serve warm or cooled.

Notes

  • For extra crunch, add chopped nuts to the crumble.
  • Swap apples for pears or berries for a twist.
  • Great for make-ahead holiday baking.
