Caramel Apple Cookies

Ingredients
  

Apple Mixture:

  • 2 cups 200g diced peeled firm tart apples
  • 2 tablespoons 30g packed dark brown sugar
  • ¼ teaspoon ground cinnamon

Cookie Dough:

  • ½ cup 113g unsalted butter, softened
  • ½ cup 110g packed dark brown sugar
  • ¼ cup 50g granulated sugar
  • 1 teaspoon 5ml pure vanilla extract
  • 1 large egg at room temperature
  • 1 ⅓ cups 190g all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 recipe Rich Salted Caramel Sauce

Instructions
 

  • Make Apple Mixture: Cook chopped apples, brown sugar, and cinnamon in a frying pan for about 5 minutes until softened. Cool completely.
  • Make Cookie Dough: Beat softened butter, both sugars, and vanilla until fluffy. Beat in the egg.
  • Combine and Chill: Whisk flour, baking soda, and salt. Fold into the butter mixture until just combined. Fold in the cooled apple mixture in two stages. Chill the dough for 20 minutes if it is too soft.
  • Bake: Scoop mounds of dough onto a lined baking sheet. Bake at 350°F for 12-16 minutes.
  • Cool and Serve: Let cookies cool for 2 minutes on the baking sheet before transferring to a wire rack. Drizzle with salted caramel sauce and enjoy.
