Gooey Banana Bread Cinnamon Rolls with Brown Butter Cream Cheese Frosting and Caramel Sauce
Soft and fluffy cinnamon rolls made with ripe bananas, stuffed with cinnamon-sugar filling and banana bits, topped with brown butter cream cheese frosting, and baked in a sticky caramel sauce.

Banana Dough:
- ¾ cup warm whole milk
- 2 ¼ tsp active dry yeast
- ¼ cup granulated sugar
- 2 ripe bananas mashed
- 2 large eggs
- ¼ cup melted unsalted butter
- 1 tsp vanilla extract
- 4 cups all-purpose flour
- ¾ tsp salt
Caramel Sauce (for the bottom):
- ½ cup brown sugar
- ¼ cup unsalted butter
- 2 tbsp heavy cream
- 1 tsp ground cinnamon
Cinnamon Banana Filling:
- ½ cup unsalted butter very soft
- ¾ cup brown sugar
- 1 ½ tbsp ground cinnamon
- 1 ripe banana chopped
Brown Butter Cream Cheese Frosting:
- ½ cup unsalted butter browned and cooled
- 8 oz cream cheese softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
- Pinch of salt
Brown butter for frosting and let cool.
Mix warm milk, yeast, and sugar. Let bloom. Add bananas, eggs, vanilla, butter, and salt. Mix in flour. Knead until smooth.
Let dough rise in greased bowl until doubled.
Melt caramel sauce ingredients. Pour into greased 9x13 pan.
Mix cinnamon filling. Roll dough into a large rectangle. Spread filling and sprinkle banana.
Roll and cut into 12 rolls. Place over caramel. Let rise again.
Bake at 350°F (175°C) for 30 minutes.
Beat frosting ingredients until smooth.
Frost warm rolls. Serve with extra caramel sauce spooned on top.
