Gooey Banana Bread Cinnamon Rolls with Brown Butter Cream Cheese Frosting and Caramel Sauce

Soft and fluffy cinnamon rolls made with ripe bananas, stuffed with cinnamon-sugar filling and banana bits, topped with brown butter cream cheese frosting, and baked in a sticky caramel sauce.

Ingredients
  

Banana Dough:

  • ¾ cup warm whole milk
  • 2 ¼ tsp active dry yeast
  • ¼ cup granulated sugar
  • 2 ripe bananas mashed
  • 2 large eggs
  • ¼ cup melted unsalted butter
  • 1 tsp vanilla extract
  • 4 cups all-purpose flour
  • ¾ tsp salt

Caramel Sauce (for the bottom):

  • ½ cup brown sugar
  • ¼ cup unsalted butter
  • 2 tbsp heavy cream
  • 1 tsp ground cinnamon

Cinnamon Banana Filling:

  • ½ cup unsalted butter very soft
  • ¾ cup brown sugar
  • 1 ½ tbsp ground cinnamon
  • 1 ripe banana chopped

Brown Butter Cream Cheese Frosting:

  • ½ cup unsalted butter browned and cooled
  • 8 oz cream cheese softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions
 

  • Brown butter for frosting and let cool.
  • Mix warm milk, yeast, and sugar. Let bloom. Add bananas, eggs, vanilla, butter, and salt. Mix in flour. Knead until smooth.
  • Let dough rise in greased bowl until doubled.
  • Melt caramel sauce ingredients. Pour into greased 9x13 pan.
  • Mix cinnamon filling. Roll dough into a large rectangle. Spread filling and sprinkle banana.
  • Roll and cut into 12 rolls. Place over caramel. Let rise again.
  • Bake at 350°F (175°C) for 30 minutes.
  • Beat frosting ingredients until smooth.
  • Frost warm rolls. Serve with extra caramel sauce spooned on top.

Notes

  • Prep the night before and bake fresh in the morning.
  • Store leftovers in the fridge; reheat before serving.
  • Add chopped pecans or chocolate chips to filling if desired.
