Soft, chewy lemon sugar cookies with bright citrus flavor, a melt-in-your-mouth texture, and a sparkly sugar coating.

Ingredients
  

Cookie Dough:

  • 2 ½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup unsalted butter softened
  • 1 ¼ cups granulated sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 1 tbsp fresh lemon zest
  • 2 tbsp fresh lemon juice

Rolling:

  • ¼ cup granulated sugar or sparkling sugar

Instructions
 

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment.
  • In a bowl, whisk together flour, baking soda, and salt.
  • In a large bowl, cream butter and sugar until light and fluffy.
  • Mix in the egg, vanilla, lemon zest, and lemon juice until well combined.
  • Gradually add dry ingredients, mixing until just combined.
  • Scoop dough into balls and roll in sugar.
  • Place on baking sheets and bake for 9–11 minutes or until edges are set.
  • Let cool on baking sheets for 5 minutes before transferring to a wire rack.

Notes

  • Store in an airtight container for up to 5 days.
  • Freeze dough balls for quick baking later.
  • Add lemon extract for stronger citrus flavor.
