Cookie Dough:
- 2 ½ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- 1 cup unsalted butter softened
- 1 ¼ cups granulated sugar
- 1 large egg
- 2 tsp vanilla extract
- 1 tbsp fresh lemon zest
- 2 tbsp fresh lemon juice
Rolling:
- ¼ cup granulated sugar or sparkling sugar
Preheat oven to 350°F (175°C). Line baking sheets with parchment.
In a bowl, whisk together flour, baking soda, and salt.
In a large bowl, cream butter and sugar until light and fluffy.
Mix in the egg, vanilla, lemon zest, and lemon juice until well combined.
Gradually add dry ingredients, mixing until just combined.
Scoop dough into balls and roll in sugar.
Place on baking sheets and bake for 9–11 minutes or until edges are set.
Let cool on baking sheets for 5 minutes before transferring to a wire rack.
