Servings 15 Balls

Ingredients

  • 1 1/4 cups Almond flour
  • 1 cup Unsweetened shredded coconut
  • 1/4 cup Honey or maple syrup for a vegan version
  • 2 tbsp Fresh lemon zest
  • 3 tbsp Fresh lemon juice
  • 1 tsp Vanilla extract
  • 1/8 tsp Turmeric for natural yellow color
  • A pinch of salt
  • Extra shredded coconut for rolling

Instructions

  • Combine: Place the almond flour, shredded coconut, salt, turmeric, honey, lemon zest, lemon juice, and vanilla extract into a food processor.
  • Process: Pulse the ingredients until a thick, sticky dough forms. Ensure the lemon zest is evenly distributed throughout.
  • Shape: Scoop out roughly 1 tablespoon of dough at a time. Roll between your palms to form smooth, round balls.
  • Coat: Place extra shredded coconut in a shallow bowl. Roll each ball in the coconut until fully coated.
  • Set: Place the bliss balls on a tray or in a container and refrigerate for a minimum of 2 hours. This is crucial for the texture to firm up.
  • Store: Keep in an airtight container in the refrigerator for up to 14 days.

Notes

  • Consistency: If the dough feels too wet, add a tablespoon more of almond flour. If too dry, add a splash of lemon juice.
  • Citrus Variety: This recipe works beautifully with lime or orange zest for a different citrus twist.

  • Portability: These are stable at room temperature for several hours, making them great for hiking or office snacks, but they are best kept cold for long-term storage.
