- 1 1/4 cups Almond flour
- 1 cup Unsweetened shredded coconut
- 1/4 cup Honey or maple syrup for a vegan version
- 2 tbsp Fresh lemon zest
- 3 tbsp Fresh lemon juice
- 1 tsp Vanilla extract
- 1/8 tsp Turmeric for natural yellow color
- A pinch of salt
- Extra shredded coconut for rolling
Combine: Place the almond flour, shredded coconut, salt, turmeric, honey, lemon zest, lemon juice, and vanilla extract into a food processor.
Process: Pulse the ingredients until a thick, sticky dough forms. Ensure the lemon zest is evenly distributed throughout.
Shape: Scoop out roughly 1 tablespoon of dough at a time. Roll between your palms to form smooth, round balls.
Coat: Place extra shredded coconut in a shallow bowl. Roll each ball in the coconut until fully coated.
Set: Place the bliss balls on a tray or in a container and refrigerate for a minimum of 2 hours. This is crucial for the texture to firm up.
