Zesty Lemon Treat Balls

Ingredients:

  • 2 large eggs
  • 1/3 cup granulated sugar
  • 3 tablespoons vegetable oil
  • 2 teaspoons baking powder
  • A pinch of salt
  • 2 cups all-purpose flour (adjust as needed)
  • Zest of 1 lemon
  • Juice of 1/2 lemon
  • 1 teaspoon pure vanilla extract
  • Powdered sugar for coating

Instructions:

  1. Combine the eggs, sugar, vegetable oil, lemon zest, lemon juice, vanilla extract, and salt in a large mixing bowl. Whisk until the mixture is thoroughly blended.
  2. Stir in the baking powder. Gradually mix in the flour until a smooth, slightly sticky dough forms. If the dough is too sticky, add a little more flour until it's manageable. If your hands stick to the dough, lightly oil them.
  3. Preheat your oven to 180°C (356°F) for convection ovens, or 200°C (392°F) for conventional ovens. Line a baking sheet with parchment paper.
  4. Shape the dough into walnut-sized balls. Roll each ball in powdered sugar until well coated.
  5. Place the sugared balls on the prepared baking sheet, spaced apart to allow for expansion.
  6. Bake for 15-20 minutes, or until the balls are just turning golden. Watch to ensure the powdered sugar doesn't brown too much.
  7. Allow the Lemon Treat Balls to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
