Zesty Lime Sugar Cookies

Bring a tangy twist to your dessert with these Zesty Lime Sugar Cookies, where the fresh zing of lime meets the classic sweetness of sugar cookies, creating a treat that's as refreshing as it is delicious.

Ingredients:

  • 1.5 cups (188g) all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp sea salt
  • 3 tbsp lime zest, freshly grated (from about 3 regular or 6 key limes)
  • 1 ¼ cups (250g) granulated sugar (organic preferred in the US)
  • 0.57 cups (130g) vegan butter, at room temperature
  • 2 tbsp (40g) vegan Greek-style yogurt or regular unsweetened soy or coconut yogurt
  • 4 tsp lime juice, freshly squeezed

Instructions:

  1. Start by preheating your oven to 350°F (175°C).
  2. Line two baking trays with parchment paper.
  3. In a bowl, whisk together flour, baking soda, baking powder, and salt.
  4. In a separate bowl, rub the lime zest into the sugar with your fingertips.
  5. Reserve ¼ cup of this lime-sugar mix in a small bowl for later.
  6. To the rest of the lime sugar, add the vegan butter and whip until light and fluffy. Blend in the vegan yogurt and lime juice.
  7. Gently fold in the dry ingredients to form your cookie dough. Chill in the fridge for 15 minutes.
  8. Scoop and roll the dough into 12 balls (about 50g each). Roll each ball in the reserved lime sugar and place on the cookie sheets, spaced out.
  9. Bake for 10 minutes. For perfectly round cookies, use a large cookie cutter to round off the edges immediately after baking.
  10. Let the cookies cool on the tray for 5 minutes before transferring them to a wire rack.
