    • 2 eggs
    • 160 g butter
    • 170 g sugar
    • 180 g buttermilk
    • 240 g all-purpose flour
    • 1.5 tsp baking powder
    • 1 tsp cinnamon
    • 1/2 tsp salt

    • 100 g almonds

  • Almond Paste:
    • 50 g almond butter
    • 70 g brown sugar
    • 50 g softened butter
    • 50 g finely chopped almonds
    • 1 tbsp cinnamon

Instructions

  1. Preheat your oven to 180°C and line a loaf pan with baking paper.
  2. Cream butter and sugar on high speed for 5-6 minutes. Beat in eggs for an extra minute, then mix in half of the buttermilk.
  3. Sift in flour, cinnamon, and baking powder. Fold in, then add the remaining buttermilk.
  4. Layer 1/3 of the batter into the loaf pan, followed by 1/3 of the almond paste. Repeat twice and top with almonds.
  5. Bake for 45-50 minutes. Let it cool completely.
