Apple Fritter Loaf Cake

Ingredients:

  • 1/4 cup dark brown sugar
  • 1/2 cup coconut sugar
  • 2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/4 tsp ground nutmeg
  • 1/4 cup butter, softened
  • 1/2 cup unsweetened applesauce
  • 2 large eggs
  • 1/2 cup milk
  • 2 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder

For the Apple Filling:

  • 2 cups apples, peeled, cored, and chopped (Honeycrisp recommended)
  • 1 tsp cinnamon
  • 1/2 tbsp coconut sugar

For the Glaze:

  • 1/2 cup powdered sugar
  • 1/2 to 1 tbsp milk
  • 1/2 tsp vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a loaf pan, or line it with parchment paper.
  2. For the apple filling, toss the chopped apples with cinnamon and coconut sugar in a small bowl. Set this aside.
  3. In a larger mixing bowl, cream together the softened butter, dark brown sugar, coconut sugar, and applesauce. Beat until well combined.
  4. Add in the eggs and vanilla extract, mixing thoroughly after each addition.
  5. In a separate bowl, whisk together the all-purpose flour, baking powder, additional cinnamon, salt, and nutmeg.
  6. Gently fold the dry ingredients into the wet mixture with a spatula, taking care not to overmix.
  7. Gradually add the milk to the batter, whisking until just combined.
  8. Pour half of the cake batter into the prepared loaf pan. Layer half of the apple filling on top, then cover with the remaining batter.
  9. Finish by topping with the rest of the apple filling. Gently press the apples into the batter.
  10. Bake in the preheated oven for about 1 hour or until a toothpick inserted into the center comes out clean.
  11. While the cake is cooling, prepare the glaze by whisking together powdered sugar, milk, and vanilla extract until smooth.
  12. Once the cake has cooled, drizzle the glaze over the top, allowing it to set for a few minutes.
