Ingredients:

  • 540 g of type 55 flour
  • 80 g of sugar
  • 1 whole egg + 1 egg yolk
  • 250 ml of milk
  • 110 g of softened butter (can be salted)
  • 150 g of butter for the filling
  • 100 g of sugar for the filling
  • 2 tsp of cinnamon for the filling
  • 8 g of dry baker's yeast

Preparation:

  1. Warm the milk until lukewarm (not boiling), add yeast, mix, and let it rest for 10 minutes.
  2. Mix the milk-yeast mixture with the other dough ingredients (excluding filling ingredients) using a mixer with a dough hook. Knead for 30 minutes.
  3. Transfer the dough to a bowl and let it rest for 2 hours at room temperature and then 8 hours in the fridge.
  4. After resting, mix filling ingredients, roll out the dough, and spread the filling.
  5. Roll up the dough and slice into individual rolls.
  6. Place the rolls on a baking tray and let them rest for 30 minutes as the oven preheats to 180°C (356°F).
  7. Bake the rolls for 25-30 minutes.
