Ingredients:

  • 540 grams all-purpose flour
  • 70 grams sugar
  • 6 grams instant yeast
  • 6 grams salt
  • 90 grams unsalted butter, melted
  • 1 egg
  • 236 grams full-fat milk
  • 107 grams water
  • 18 grams milk powder
  • 1 tablespoon vanilla extract

Instructions:

  1. In a mixing bowl, combine all the ingredients. Knead with a stand mixer for about 10-12 minutes until the dough comes together and doesn't stick to the sides.
  2. Oil your hands, form the dough into a ball, and place it in an oiled bowl. Let it proof for 1 hour at room temperature.
  3. Once proofed, roll out the dough and use a cookie cutter or a glass cup to cut out donut shapes. Place them on a parchment-lined tray and cover them for another hour.
  4. Heat oil to 180°C (356°F). Fry the donuts until golden brown.
  5. Toss the fried donuts in a mixture of sugar and cinnamon.
