  • White Chocolate, chopped: 230 g
  • Strawberry Sauce: 1/4 cup

  • Powdered Sugar: 125 g
  • Almond Flour: 125 g
  • Granulated Sugar: 80 g
  • Egg Whites: 90 g
  • Salt: A pinch
  • Strawberry and Lemon Extract
  • Jelly Food Coloring

Instructions:

  1. White Chocolate Filling Preparation:
    • Place chopped white chocolate in a glass bowl.
    • Heat the cream until hot, then pour over the chocolate. Let sit for 3-4 minutes, then stir until smooth.
    • Add fruit extract and strawberry puree; mix well. Cool and refrigerate for 2-4 hours.
  2. Macaron Shells Preparation:
    • Line baking sheets with Silpat or parchment paper.
    • Sift powdered sugar and almond flour into a bowl. Grind the mixture in a food processor for 1-2 minutes, then return to the bowl.
    • Whisk egg whites and salt to soft peaks, gradually add granulated sugar, and continue whisking to stiff peaks.
    • Gently fold in half of the almond flour mixture, then the rest, and finally the food coloring.
    • Transfer batter to a piping bag and pipe 1-inch disks on prepared sheets, spaced 1 inch apart.
