  • 120g Butter (slightly cool to the touch)
  • 130g Brown Sugar (½ cup + 3 tbsp)
  • 2 Egg Yolks (34g)
  • 90g Pumpkin Puree (2 heaping tbsp)
  • 1 tbsp Pumpkin Pie Spice
  • 1.5 cups Flour (170g)
  • 2 tbsp Cornstarch (30g)
  • 1 heaping tsp Baking Powder
  • A pinch of Baking Soda
  • 1 packet Vanilla

For the Cheesecake Filling:

  • 180g Spreadable Cream Cheese
  • 45g Powdered Sugar (3 tbsp)
  • 1 tsp Vanilla

For the Outer Coating:

  • 3 tbsp Granulated Sugar
  • 1 tsp Pumpkin Pie Spice

Instructions:

  1. Prepare the Filling:
    • Mix cream cheese, powdered sugar, and vanilla. Place teaspoons of the mixture onto parchment paper and freeze.
  2. Make Pumpkin Puree:
