Bailey’s Frosted Brownies with Chocolate Ganache

Ingredients:

For the Brownies:

  • 8×8 pan of brownies (store-bought or homemade)

For the Bailey’s Frosting:

  • 3/4 cup unsalted butter, room temperature
  • 3 cups confectioners’ sugar, sifted
  • 3 to 5 Tablespoons Bailey’s Irish Cream Liqueur

For the Chocolate Ganache:

  • 3/4 cup good quality semisweet chocolate chips
  • 2 tablespoons heavy cream
  • 1/2 cup Bailey’s Irish Cream Liqueur

Instructions:

1. Brownies: Begin by preparing your brownies. If you’re using a homemade recipe, follow its directions. If you’re using a store-bought mix, use the instructions on the package. Either choice is suitable for this treat.

Bailey’s Frosting:

2. Use an electric mixer and beat the butter on high speed until it’s light and fluffy. This process should take about 3 minutes. Next, add the powdered sugar, making sure it’s sifted to avoid any lumps, and combine it well with the butter. Pour in Bailey’s Irish Cream Liqueur and blend until they’re well mixed. If you’d like a more fluid frosting consistency, simply add more liqueur one tablespoon at a time.

3. Once your brownies have fully cooled, spread the Bailey’s frosting evenly over them. Place the brownies in the fridge to allow the frosting to set a bit while you prepare the ganache.

Chocolate Ganache:

4. In a bowl, pour in the semisweet chocolate chips and set them aside for later use.

5. Use a saucepan and add both the heavy cream and Bailey’s Irish Cream Liqueur. Keep the saucepan on medium heat until the liquid becomes scalding hot. A simmer around the edges of the pan indicates that it’s ready. Take this mixture and pour it over the chocolate chips you set aside. Let it sit for around 5 minutes, then stir the mix until the chocolate is entirely melted and your ganache becomes smooth.

6. Take out your frosted brownies from the fridge and layer on the chocolate ganache. Once applied, let the brownies sit for about 20 minutes. Following this, place them back in the fridge to ensure the ganache sets properly. Once set, slice your brownies into your desired portions, serve, and enjoy!
