A Delightful Cake Perfect for Any Occasion

This Banana Roll Cake is so light and delicious that it has quickly become a family favorite. Made with a fluffy sponge cake and filled with creamy custard and fresh bananas, this cake is perfect for any occasion. The rich ganache topping adds a decadent touch, making each slice irresistible.

Equipment Needed

To make this delicious Banana Roll Cake, you will need the following equipment:

Ingredients:

For the Sponge Cake:

1. Batter:

  • 4 egg yolks
  • 55ml milk (half a tea glass)
  • 50ml vegetable oil (half a tea glass)
  • 60g flour (a bit more than half a cup)

2. Meringue:

  • 4 egg whites
  • 4g lemon juice (1 tablespoon)
  • 50g sugar (quarter cup)

For the Filling:

  • Pastry cream
  • Bananas

For the Ganache:

  • 100g dark chocolate
  • 1 packet cream (200ml)

Instructions:

  1. Prepare the Batter:
    • In a mixing bowl, whisk together the egg yolks, milk, vegetable oil, and flour until smooth. Set aside.
  2. Prepare the Meringue:
    • In another mixing bowl, beat the egg whites until frothy.
    • Gradually add the sugar while continuing to beat the egg whites.
    • Add the lemon juice and beat until stiff peaks form.
  3. Combine and Bake:
    • Gently fold the egg yolk mixture into the meringue using a spatula, being careful not to deflate the egg whites.
    • Pour the batter onto a baking tray lined with parchment paper and spread it evenly.
    • Bake in a preheated oven at 160°C (320°F) for 20-25 minutes, or until the cake is lightly golden and springs back when touched.
  4. Roll the Cake:
    • Once the cake is baked, remove it from the oven and immediately invert it onto another piece of parchment paper or a clean kitchen towel.
    • Carefully peel off the parchment paper from the bottom of the cake.
    • While the cake is still warm, roll it up with the parchment paper or towel and let it cool completely.
  5. Prepare the Filling and Ganache:
    • Make the pastry cream according to your recipe or package instructions.
    • In a saucepan, heat the cream until it just begins to simmer. Remove from heat and add the dark chocolate, stirring until smooth and melted.
  6. Assemble the Cake:
    • Unroll the cooled cake and spread the pastry cream evenly over the surface.
    • Place the bananas along one edge of the cake.
    • Roll the cake back up, this time without the parchment paper or towel.
    • Pour the ganache over the rolled cake and spread it evenly.
  7. Serve:
    • Allow the ganache to set before slicing and serving the cake.
