Blackberry Jelly Crepe Cake Recipe

Ingredients:

Crepes:

  • Eggs: 3
  • Sugar: 40g
  • Low gluten flour: 110g
  • Bamboo Charcoal Powder: 5g
  • Milk: 320g
  • Butter (melted): 35g

Filling:

  • Blackberry Sauce: 70g
  • Light cream: 500g
  • Sugar: 30g

Blackberry Wine Jelly:

  • Blackberry Wine: 1 bottle
  • Gelatin/Agar Agar/White Jelly Powder: 1 cup

Instructions:

For the Crepes:

  1. In a mixing bowl, whisk together eggs, sugar, low gluten flour, and bamboo charcoal powder.
  2. Gradually mix in milk and melted butter, ensuring no lumps remain.
  3. Strain the mixture for a smoother consistency.
  4. On low heat, pour a ladleful of the batter into a non-stick pan. Swirl it around for a thin, even crepe.
  5. Cook until bubbles form on the surface, then carefully flip to cook the other side briefly.
  6. Transfer to a plate and allow to cool. Repeat with the remaining batter.

For the Filling:

  1. In a mixing bowl, combine blackberry sauce, light cream, and sugar.
  2. Whip the mixture until it reaches a yogurt-like consistency.
  3. Transfer the filling to a piping bag for easier assembly.

For the Blackberry Wine Jelly:

  1. In a saucepan, combine blackberry wine and your choice of gelatin, agar agar, or white jelly powder.
  2. Stir continuously on medium heat until the mixture begins to bubble lightly.
  3. Remove from heat and pour into two separate molds.
  4. Refrigerate until completely set.

Assembly:

  1. Begin with a crepe on your serving plate. Pipe or spread an even layer of the cream filling over it.
  2. Place another crepe on top and repeat the process. Around the midpoint of your layers, add a layer of the blackberry wine jelly.
  3. Continue layering with crepes and filling.
  4. Finish the assembly with the second layer of blackberry wine jelly on top.
  5. Garnish with dollops of the cream filling and fresh blackberries.
