  • 150 g (3/4 cup) sugar

  • A pinch of salt

  • 2 tsp lemon juice
  • 200 g (1 2/3 cups) flour
  • 1/2 packet (2 tsp) baking powder
  • 200 g (about 1 1/2 cups) fresh blueberries
  • A little flour for coating berries

Instructions

  1. Grease a small loaf pan (25×11 cm) and dust with flour. Preheat the oven to 175°C (347°F) with convection.
  2. Wash and drain the blueberries, and dry them if necessary.
  3. Cream together butter, sugar, vanilla sugar, and a pinch of salt. Beat in the eggs one at a time. Mix in quark and lemon juice.
  4. Combine flour and baking powder, then fold into the mixture.
  5. Toss the blueberries with a bit of flour (to prevent sinking in the batter) and gently fold them into the batter.
  6. Pour the batter into the prepared pan and smooth the top. Optionally, sprinkle with chocolate chips.
  7. Bake for about 45-50 minutes, or until a skewer comes out clean. Let it cool in the pan, then unmold.
