Ingredients: For the Brownie:

  • 2 eggs
  • 1 teacup sugar (120g)
  • 1 cup flour (120g)
  • 2 tbsp cocoa powder
  • 125g dark chocolate
  • 150g butter
  • 1/2 teacup milk

For the Cheesecake:

  • 200g cream cheese (labne)
  • 250g quark
  • 1/2 teacup sugar (50g)
  • 1 egg
  • 1 tbsp cornstarch
  • 1 tbsp vanilla extract or 1 packet vanilla sugar

Instructions:

  1. Line a 26 cm cake tin with parchment paper and grease the sides.
  2. Melt butter and mix in chocolate. Let it cool.
  3. Beat eggs and sugar until light. Mix in the chocolate-butter mixture and milk. Sift in flour and cocoa, and fold gently. Reserve 2.5 tablespoons of the batter.
  4. Pour the rest into the tin and smooth it out.
  5. For the cheesecake layer, mix all ingredients and pour over the brownie layer. Smooth the top.
  6. Drop spoonfuls of the reserved brownie batter and swirl with a stick to create a marbled effect.
  7. Bake at 180°C (356°F) in the middle-lower part of the oven for 30 minutes. Let it cool in the tin for 15-20 minutes before removing.
  8. Serve warm or at room temperature. It's especially delicious when warm.
