Ingredients:

  • 200ml Unsweetened Almond Milk (or any preferred milk)
  • 1 tbsp White Vinegar
  • 90ml Sunflower Oil
  • 185g Granulated Sugar
  • 1.5 tsp Baking Powder
  • 1 tsp Pure Vanilla Extract
  • 1 tsp Cinnamon Powder
  • 1/4 tsp Salt
  • 200g All-Purpose Flour
  • 1/2 Granny Smith Apple (roughly 190g), cubed and tossed with 1/2 tsp cinnamon powder
  • 45g Walnut Pieces
  • 1 tbsp Granulated Sugar (for topping)
  • Powdered Sugar (for garnish)

Directions:

  1. Preparation: Begin by preheating your oven to 375ยฐF (190ยฐC). Line an 8-inch round springform pan with parchment paper for easy removal later.
  2. Creating the Wet Mixture: In a mixing bowl, blend the warm almond milk with white vinegar. Let this mixture sit for 5 minutes. Once settled, introduce the sugar, sunflower oil, and vanilla extract. Whisk until the sugar has fully dissolved.
  3. Preparing the Dry Ingredients: In a separate bowl, whisk together all the dry ingredients: flour, baking powder, cinnamon, and salt.
  4. Combining Wet & Dry Mixtures: Gently fold the dry mixture into the wet ingredients until just combined.
  5. Cake Assembly: Pour the combined batter into the prepared pan. Neatly arrange the cinnamon-tossed apple cubes atop the batter. Scatter the walnut pieces over the apples and finish with a liberal sprinkling of granulated sugar.
