Caramilk Cheesecake with Digestive Biscuit Base

Ingredients

For the Base:

  • 350g Digestive biscuits, finely crushed
  • 180g unsalted butter, melted

For the Cheesecake Filling:

  • 200g Caramilk chocolate, melted and cooled
  • 300ml double cream, cold
  • 500g cream cheese, at room temperature
  • 120g icing sugar

For the Topping:

  • 130g Caramilk chocolate
  • 80ml double cream

To Decorate:

  • 150ml double cream, whipped to stiff peaks
  • 12-16 pieces of Caramilk chocolate, broken into squares

Instructions

  1. Begin by preparing an 8-inch springform tin with a layer of parchment paper on the bottom for easy release.
  2. Combine the crushed Digestive biscuits with melted butter and press the mixture firmly into the bottom of the tin to form the crust. Chill in the fridge to set.
  3. For the cheesecake filling, whip the cold double cream until soft peaks form.
  4. In a separate bowl, blend the cream cheese and icing sugar until smooth.
  5. Fold the melted and cooled Caramilk chocolate into the cream cheese mixture, then gently fold in the whipped double cream until the filling is smooth and well combined.
  6. Pour the filling over the biscuit base, smoothing the top with a spatula. Chill in the fridge while you prepare the ganache.
  7. To make the ganache, gently heat the double cream and pour it over the Caramilk chocolate, stirring until smooth and glossy.
  8. Pour the ganache over the chilled cheesecake filling and return to the fridge to set.
  9. Once set, decorate the cheesecake with the whipped double cream, piping it on if desired, and add the Caramilk chocolate pieces.

Allow the cheesecake to set completely in the fridge before serving, ideally for several hours or overnight, to ensure the perfect consistency.
