  • 150 g digestive biscuits, crushed
  • 75 g melted butter

  • 1 packet of vanilla sugar or 1 tsp vanilla extract

Instructions:

  1. Line a 22/24 cm springform pan with parchment paper.
  2. Mix crushed biscuits with melted butter and press into the bottom of the pan. Chill in the refrigerator for 20 minutes.
  3. For the filling, mix cream cheese, sugar, vanilla sugar/extract, and lemon zest. Add cornstarch and cream; mix well. Finally, incorporate the eggs one by one. Pour this mixture into the pan.
  4. Wrap the pan edges with aluminum foil (double layer) and bake in a preheated oven at 160°C (320°F) for 60 minutes. Place an ovenproof dish with water in the oven (preferably on the bottom rack).   5. Allow the cheesecake to cool to room temperature, then refrigerate for 6-8 hours or overnight.
