Ingredients:

For the Crumble:

  • 1/2 cup plus 1 tablespoon cold butter
  • 1/2 cup sugar
  • 1 1/4 cups all-purpose flour

For the Cake:

  • 3/4 cup plus 2 tablespoons room temperature butter
  • 3/4 cup sugar
  • 1 teaspoon vanilla extract
  • 4 room temperature eggs
  • 5 tablespoons creamy yogurt
  • 1 3/4 cups all-purpose flour
  • 1 tablespoon baking powder
  • 2/3 cup cornstarch
  • 1/3 cup lukewarm milk
  • 1 1/2 to 2 cups pitted cherries
  • Powdered sugar for dusting

Instructions:

  1. Preheat the oven to 175°C (350°F). Grease and flour a 37cm x 25cm (approx. 15"x10") baking tray.
  2. Start with the crumble: Mix the specified amounts of butter, sugar, and flour until the mixture resembles coarse crumbs. Set aside.
  3. For the cake: Cream together the butter, sugar, and vanilla extract until smooth and fluffy.
  4. Beat in the eggs one at a time, ensuring each is well incorporated before adding the next. Stir in the yogurt.
  5. Whisk together the flour, baking powder, and cornstarch in a separate bowl. Gradually mix these dry ingredients into the wet mix, alternating with the milk. Start and finish with the dry ingredients to make a smooth batter.
  6. Spread the batter into the prepared baking tray. Press the cherries evenly into the batter, covering the surface.
  7. Generously sprinkle the crumble mixture over the cherries.
  8. Bake for about 35 minutes, until the top is golden and a toothpick inserted into the cake comes out clean.
  9. Let the cake cool in the tray, then dust with powdered sugar to add a touch of sweetness and a lovely visual effect.

Serve this Cherry Crumble Delight Cake as a delightful end to your meal or a companion to your afternoon tea. The combination of sweet cherries and a crunchy crumble is sure to bring smiles all around. Enjoy! 🍒👩🏻‍🍳
