Chocolate Almond Butter Granola Squares

These no-bake chocolate almond butter granola squares are a healthy and delicious treat that you can enjoy without any guilt. They're simple to make, dairy-free, and the chocolate topping can be customized according to your dietary needs.

Ingredients:

For the Granola Squares:

  • 1 1/2 cups gluten-free granola (such as Yuj Granola)
  • 1/2 cup peanuts
  • 2 tbsp maple syrup
  • 2 tbsp almond butter (make sure it's not too oily)

For the Almond Butter Center:

  • 1/3 cup almond butter, softened

For the Topping:

  • 1 1/2 cups dairy-free chocolate chips
  • 1 tbsp coconut oil

Instructions:

  1. In a food processor, combine the granola, peanuts, maple syrup, and 2 tablespoons of almond butter. Pulse until the mixture is completely blended.
  2. Firmly press one scoop of the granola mixture into the bottom of each cavity of a silicone mold.
  3. Drizzle the softened almond butter over the granola layer in each mold.
  4. Place the molds in the freezer for 3-4 hours or overnight to set the granola base and almond butter.
  5. For the chocolate topping, melt the dairy-free chocolate chips and coconut oil in the microwave using 20-second increments, stirring after each interval until the chocolate is fully melted and smooth.
  6. Carefully pour a scoop of the melted chocolate mixture over each frozen granola square, ensuring it's spread evenly.
  7. Return the squares to the freezer for an additional 30 minutes to set the chocolate topping.
  8. Once set, remove the granola squares from the molds and enjoy. They can be stored in the refrigerator or freezer for a firmer texture.

  • If you prefer a nut-free version, you can substitute the peanuts with seeds like pumpkin or sunflower and use a seed butter instead of almond butter.
