Ingredients:
Loaf Cake:
- 240 g all-purpose flour
- 2 ½ tsp. baking powder
- ¾ tsp. salt
- 100 g unsalted butter, room temperature
- 60 g vegetable oil
- 250 g granulated sugar
- 2 eggs + 1 egg white
- 2 tsp. vanilla extract
- 120 g sour cream
- 120 g whole milk
- 30 g dutch process cocoa powder
- 45 g espresso (or hot water/coffee)
- 240 g dark sweet cherries, washed and pitted
Whipped Ganache:
- 225 g heavy whipping cream
- 160 g dark sweet cherries, washed and pitted
- 225 g milk chocolate chips or bar
Instructions:
- For the Loaf Cake:
- Preheat oven to 350°F / 175°C. Prep a 9x5" metal loaf pan.
- Whisk flour, baking powder, and salt.
- Cream butter, oil, and sugar. Add eggs, vanilla, and sour cream.
- Alternate adding flour mix and milk. Fold in cherries.
- Mix cocoa powder and espresso. Add 2 cups batter to cocoa mix.
- Layer and swirl vanilla and chocolate batters in pan.
- Bake 50-60 minutes.
- For the Ganache:
- Place chocolate in a bowl.
- Heat cherries and cream to a simmer. Rest, reheat, and strain over chocolate.
- Mix until smooth. Cool in freezer. Whip until fluffy.
- Spread on cooled cake. Garnish with cherries.
