Chocolate Cherry Marbled Loaf Cake with Cherry Infused Whipped Ganache

Ingredients:

Loaf Cake:

  • 240 g all-purpose flour
  • 2 ½ tsp. baking powder
  • ¾ tsp. salt
  • 100 g unsalted butter, room temperature
  • 60 g vegetable oil
  • 250 g granulated sugar
  • 2 eggs + 1 egg white
  • 2 tsp. vanilla extract
  • 120 g sour cream
  • 120 g whole milk
  • 30 g dutch process cocoa powder
  • 45 g espresso (or hot water/coffee)
  • 240 g dark sweet cherries, washed and pitted

Whipped Ganache:

  • 225 g heavy whipping cream
  • 160 g dark sweet cherries, washed and pitted
  • 225 g milk chocolate chips or bar

Instructions:

  1. For the Loaf Cake:
    • Preheat oven to 350°F / 175°C. Prep a 9x5" metal loaf pan.
    • Whisk flour, baking powder, and salt.
    • Cream butter, oil, and sugar. Add eggs, vanilla, and sour cream.
    • Alternate adding flour mix and milk. Fold in cherries.
    • Mix cocoa powder and espresso. Add 2 cups batter to cocoa mix.
    • Layer and swirl vanilla and chocolate batters in pan.
    • Bake 50-60 minutes.
  2. For the Ganache:
    • Place chocolate in a bowl.
    • Heat cherries and cream to a simmer. Rest, reheat, and strain over chocolate.
    • Mix until smooth. Cool in freezer. Whip until fluffy.
    • Spread on cooled cake. Garnish with cherries.
