Chocolate Chip Cake with Silky Ganache Frosting

  • 6 tbsp (84g) unsalted butter, melted
  • ⅔ cup (145g) packed dark brown sugar
  • 3 tbsp (40g) granulated sugar
  • 1 tsp (5ml) pure vanilla extract
  • 1 large egg
  • A generous ¼ tsp salt
  • 1 ¼ cups (180g) all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ½ cup (120ml) milk
  • ¾ cup mini dark chocolate chips

Frosting:

  • 1 cup (237ml) 35% whipping cream
  • 8 oz (227g) semisweet dark chocolate (50-55% cocoa), finely chopped

Instructions:

  1. Preheat your oven to 350°F (175°C) and prepare an 8×8-inch baking pan with parchment paper.
  2. For the cake, sift together flour, baking powder, baking soda, and salt. In another bowl, whisk the melted butter with both sugars and vanilla until smooth, then whisk in the egg until fully integrated.
  3. Stir in the flour mixture until just moistened, then gradually add the milk, mixing until the batter is uniform. Gently fold in the chocolate chips.
  4. Pour the batter into the pan and bake for 22-26 minutes, until a skewer inserted comes out clean.
  5. For the frosting, heat the cream until it simmers, then pour over the chopped chocolate. After 3 minutes, whisk into a glossy ganache. Allow it to cool until thick like pudding, stirring occasionally.
  6. Spread the ganache over the cooled cake and sprinkle with additional chocolate chips.
