Chocolate Chip Muffins with Streusel Topping

Ingredients:

For the Streusel:

  • 28g unsalted butter
  • 40g light brown sugar
  • 45g all-purpose flour
  • ¼ tsp. ground cinnamon

For the Chocolate Chip Muffins:

  • 56g unsalted butter
  • 100g granulated sugar
  • 1 egg, room temperature
  • ½ tsp. vanilla extract
  • 75g whole milk, room temperature
  • 45g sour cream, room temperature
  • 130g all-purpose flour
  • 1 tsp. baking powder
  • ¼ tsp. baking soda
  • ¼ tsp. salt
  • 90g chocolate chips

Instructions:

  1. Preparation: Preheat the oven to 425°F (220°C). Line a 6-cup muffin pan with parchment liners.
  2. Streusel Topping:
    • Melt butter in a small bowl.
    • Add sugar, flour, and cinnamon. Mix with a fork until clumpy. Set aside.
  3. Muffin Batter:
    • Melt butter in a mixing bowl, then whisk in sugar.
    • Add egg, vanilla, milk, and sour cream, whisking until well combined.
    • Fold in flour, baking powder, baking soda, and salt just until a few streaks remain.
    • Mix in chocolate chips until just combined.
  4. Assembly: Divide the batter among the muffin cups, filling each to the top. Sprinkle with streusel and additional chocolate chips, if desired.
  5. Baking: Bake for 5 minutes. Without opening the oven, reduce heat to 350°F (175°C) and bake for another 10-15 minutes, or until a toothpick inserted comes out clean.
