Ingredients:
For the Streusel:
- 28g unsalted butter
- 40g light brown sugar
- 45g all-purpose flour
- ¼ tsp. ground cinnamon
For the Chocolate Chip Muffins:
- 56g unsalted butter
- 100g granulated sugar
- 1 egg, room temperature
- ½ tsp. vanilla extract
- 75g whole milk, room temperature
- 45g sour cream, room temperature
- 130g all-purpose flour
- 1 tsp. baking powder
- ¼ tsp. baking soda
- ¼ tsp. salt
- 90g chocolate chips
Instructions:
- Preparation: Preheat the oven to 425°F (220°C). Line a 6-cup muffin pan with parchment liners.
- Streusel Topping:
- Melt butter in a small bowl.
- Add sugar, flour, and cinnamon. Mix with a fork until clumpy. Set aside.
- Muffin Batter:
- Melt butter in a mixing bowl, then whisk in sugar.
- Add egg, vanilla, milk, and sour cream, whisking until well combined.
- Fold in flour, baking powder, baking soda, and salt just until a few streaks remain.
- Mix in chocolate chips until just combined.
- Assembly: Divide the batter among the muffin cups, filling each to the top. Sprinkle with streusel and additional chocolate chips, if desired.
- Baking: Bake for 5 minutes. Without opening the oven, reduce heat to 350°F (175°C) and bake for another 10-15 minutes, or until a toothpick inserted comes out clean.
