  • 1 ¼ cups (250g) granulated sugar
  • 3 oz (85g) unsweetened chocolate, melted and cooled
  • 2 large eggs, room temperature
  • ¼ cup (60ml) full-fat sour cream, room temperature
  • 1 teaspoon (5ml) pure vanilla extract
  • 1 cup (237ml) whole milk, room temperature

For the Frosting:

  • ⅔ cup (150g) unsalted butter, very soft
  • 2 cups (240g) icing sugar, divided
  • 4 tablespoons (60ml) 35% whipping cream, divided
  • 1 teaspoon (5ml) pure vanilla extract
  • A pinch of salt
  • 4 oz (113g) unsweetened chocolate, melted and cooled

For the Glaze:

  • 2 oz (56g) dark chocolate, finely chopped
  • 2 tablespoons (30ml) water
  • 2 teaspoons (10ml) corn syrup

Instructions

  1. Preheat the oven to 350°F (175°C). Line muffin pans with paper liners.
  2. Sift together flour, cocoa, baking powder, baking soda, and salt. Set aside.
  3. Cream butter until creamy, add sugars and beat until fluffy. Blend in melted chocolate. Add eggs, one at a time, then sour cream and vanilla, beating until voluminous.
  4. Alternately add dry ingredients and milk to the batter, mixing just until incorporated.
  5. Divide the batter among the muffin cups and bake for 16-20 minutes. Cool on a wire rack.
  6. For the frosting, beat butter with icing sugar and cream, then mix in vanilla, salt, and chocolate. Add remaining cream and icing sugar to reach a smooth consistency.
  7. Make the glaze by melting chocolate with water and corn syrup until glossy. Cool completely.
  8. Frost each cupcake and drizzle with the glaze.
