Cinnamon Apple Loaf with Cinnamon Glaze

This cinnamon apple loaf is a delightful treat that's brimming with chunks of fresh apples and crowned with a luscious cinnamon glaze.

Ingredients:

For the Loaf:
  • 2 eggs, room temperature
  • 1 cup granulated sugar
  • 1/2 cup coconut oil, melted
  • 2 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 tsp cinnamon
  • 1 tsp apple pie spice
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 3/4 cups apples, peeled and chopped
For the Cinnamon Glaze:
  • 1/2 cup powdered sugar
  • 1 tbsp milk (any kind)
  • 1 tbsp maple syrup or honey
  • 1/2 tsp cinnamon powder

Instructions:

For the Loaf:
  1. Preheat your oven to 350°F (175°C) and line a loaf tin with parchment paper.
  2. In a large bowl, whisk together eggs, sugar, melted coconut oil, and vanilla extract until well combined.
  3. Sift in the flour, cinnamon, apple pie spice, baking powder, and baking soda. Mix until just combined, being careful not to overmix.
  4. Gently fold in the chopped apples.
  5. Pour the batter into the prepared loaf tin and top with additional apple pieces if desired.
  6. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let the loaf cool in the tin.
For the Glaze:
  1. In a small bowl, mix together powdered sugar, milk, maple syrup or honey, and cinnamon until smooth.
  2. Once the loaf has cooled, drizzle the glaze over the top.
