Gluten-Free S’mores Banana Bread

Indulge in this unique twist on classic banana bread, infused with the flavors of s’mores. It’s loaded with melted chocolate and gooey marshmallows, all while being made with gluten-free and better-for-you ingredients.

Ingredients:

  • 3 medium or 2 large ripe bananas, mashed (about 1 cup)
  • 3/4 cup granulated sugar (white, brown, or coconut)
  • 1/3 cup coconut oil, melted
  • 2 large eggs, room temperature
  • 2 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 1/2 cups gluten-free all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup chocolate chips
  • 1/2 cup marshmallows, frozen (plus extra for topping)
  • Additional chocolate chips for topping

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a loaf tin with parchment paper.
  2. In a large bowl, mix together the mashed bananas, sugar, melted coconut oil, eggs, and vanilla extract until well combined.
  3. Sift in the flour, cinnamon, baking soda, and salt. Mix thoroughly with a hand mixer or spatula.
  4. Gently fold in the chocolate chips and frozen marshmallows.
  5. Pour the batter into the prepared loaf tin. Sprinkle additional marshmallows and chocolate chips on top.
  6. Bake for 55-60 minutes. After about 20 minutes of baking, loosely cover the bread with a piece of aluminum foil to prevent the marshmallows from burning.
  7. Once baked, remove from the oven and let cool in the tin.
