  • 6-8 orange slices
  • 38g granulated sugar
  • 55g water
  • 5 eggs (about 55g each)
  • 56g fresh orange juice
  • 42g vegetable oil
  • 66g cake flour (low protein, around 8%)
  • 52g granulated sugar (for the egg whites)
  • 1 tbsp lemon juice
  • 1 tbsp vanilla extract

For the Filling:

  • 160g heavy cream
  • 25g granulated sugar
  • 1 tbsp vanilla extract
  • 1.5g salt

Instructions:

  1. Candied Orange Slices:
    • In a pot, combine orange slices, sugar, and water. Boil, then simmer on medium-low until most of the water evaporates.
    • Lay out the orange slices on parchment paper and pat dry.
  2. Prepare the Baking Tray:
    • Line a baking tray with a mat or parchment paper. Arrange the candied orange slices on it.
  3. Cake Batter:
    • Whisk together orange juice, vegetable oil, cake flour, and egg yolks. Set aside.
  4. Whipping Egg Whites:
    • Preheat the oven to 150℃ (302℉).
    • Add lemon juice, sugar, and vanilla extract to egg whites. Beat until soft peaks form.
    • Fold the batter gently into the whipped egg whites.
  5. Baking the Cake:
    • Pour and smooth the batter over the oranges in the tray. Tap to remove air bubbles.
    • Bake for 32 minutes.
  6. Whipped Cream Filling:
    • Whip heavy cream, sugar, salt, and vanilla extract until thickened and stiff.
