Classic American Apple Pie

Ingredients for the Dough:

  • 350 g all-purpose flour, the foundation
  • 225 g cold butter, cubed, for flakiness

  • 30 ml cold water, to bring the dough together

Ingredients for the Filling:

  • 750 g apples (like Granny Smith), peeled, cored, and sliced for tartness and texture
  • 100 g sugar, for the apple’s sweet contrast
  • 30 g all-purpose flour, to thicken the filling
  • 1 tsp cinnamon, for that warm spice
  • Juice of a small lemon, to balance and brighten

For the Glaze:

  • 1 egg yolk, beaten, for a golden sheen
  • 1 tbsp milk or cream, to enrich the glaze

Preparation:

  1. Start with the dough. In a large bowl, whisk together flour, sugar, and salt. Rub in the cold butter until the mixture resembles coarse crumbs. Drizzle in the cold water, stirring until a dough forms. Wrap and chill for 30 minutes.
  2. For the apple filling, toss the slices with sugar, flour, cinnamon, and lemon juice until well coated.
  3. On a floured surface, roll out the dough to fit the dish, with an overhang. Line the dish, press down, and trim the excess. Prick the bottom with a fork.
  4. Mound the apple mixture into the crust. Roll out the remaining dough, cut into strips, and weave over the top in a lattice, sealing the edges.
  5. Preheat your oven to 200°C. Mix the egg yolk and milk, and brush over the lattice.
  6. Bake the pie for 45-50 minutes until the crust is golden and the apples are bubbly.
  7. Let the pie cool to set the filling, then slice and serve.
