  • 400g All-Purpose Flour
  • 160ml Lukewarm Milk
  • 20g Fresh Yeast
  • 1 Egg (room temperature)
  • 2 Egg Yolks
  • 60g Granulated Sugar
  • 1 Tbsp Vanilla Sugar
  • 60g Softened Butter
  • 1/4 tsp Salt

  • Heaping Tbsp Cinnamon
  • 2-3 Tbsp Sugar

Crumble Topping:

  • 2 Tbsp Butter
  • 2 Tbsp Powdered Sugar
  • 4 Tbsp Flour

Icing (optional):

  • 4 Tbsp Powdered Sugar
  • 1 Tbsp Lemon Juice
  • 1 Tsp Boiling Water
  • 1 Tbsp 100% Pistachio Paste


  1. Prepare the Dough:
    • Mix yeast with a tablespoon of sugar and a few tablespoons of milk until dissolved, then add 3 tablespoons of flour. Let it rise for about 10 minutes.
