Classic Vegan Vanilla Cake with Buttercream Frosting

Craft a deliciously moist and fluffy Classic Vegan Vanilla Cake layered with smooth buttercream frosting, perfect for any celebration or as a delightful treat.

Ingredients:

For the Cake:

  • ¾ cup + 5 tsp (200ml) vegan buttermilk (soy milk mixed with 2 tsp apple cider vinegar)
  • 2 ⅓ cups + 1 tbsp (300g) all-purpose flour
  • 2 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp sea salt
  • 1 ¼ cups (250g) granulated sugar
  • Seeds of 1 vanilla pod
  • 0.44 cups (100g) vegan butter, room temperature
  • ⅓ cup (75ml) olive oil
  • ¾ cup (180g) vegan Greek-style yogurt, or alternative plant-based yogurt
  • 2 tsp vanilla extract
  • ½ tsp almond extract (optional)

For the Frosting:

  • 1 to 1 ½ batches vegan buttercream frosting, depending on desired coverage

Instructions:

  1. Preheat your oven to 347°F (175°C). Grease and line three 6-inch cake tins with oil and parchment paper.
  2. Combine soy milk and vinegar to make vegan buttermilk; set aside for 10 minutes.
  3. In a large bowl, whisk flour, baking powder, baking soda, and salt.
  4. In another large bowl, rub vanilla seeds into sugar. Add vegan butter and whisk for 3 minutes.
  5. Whisk in olive oil, yogurt, vanilla extract, and almond extract until fluffy. Mix in vegan buttermilk.
  6. Fold in the dry ingredients in two parts, being careful not to overmix.
  7. Divide batter among cake tins and bake for 22-25 minutes, or until a skewer comes out with a few crumbs.
  8. Allow cakes to cool in tins for 15-20 minutes, then transfer to a cooling rack. Refrigerate in an airtight container until ready to decorate.
  9. Prepare vegan buttercream frosting as per the recipe.
  10. To assemble, spread a small amount of frosting on a cake turntable, add the first cake layer, and spread a layer of frosting on top. Repeat with the remaining layers.
  11. Frost the sides and top of the cake, smoothing with a scraper. Optionally, pipe decorative frosting on top.
