Instructions:
- Preheat your oven to 347°F (175°C). Grease and line three 6-inch cake tins with oil and parchment paper.
- Combine soy milk and vinegar to make vegan buttermilk; set aside for 10 minutes.
- In a large bowl, whisk flour, baking powder, baking soda, and salt.
- In another large bowl, rub vanilla seeds into sugar. Add vegan butter and whisk for 3 minutes.
