Ingredients:

  • For the Cake:
    • 175g dairy-free yogurt
    • 100g maple syrup
    • 100g nut butter
    • 200ml almond milk
    • 1 tsp apple cider vinegar
    • 300g self-raising gluten-free flour
    • 50g vegan vanilla protein powder
    • 1 tsp baking powder
    • 1 tsp vanilla extract
    • 0.5 tsp bicarbonate of soda
  • For the Filling:
    • 6 tsp strawberry jam (store-bought or homemade)
  • For the Buttercream:
    • 300g dairy-free yogurt
    • 80g vegan vanilla protein powder

Instructions:

  1. Prepare for Baking:
    • Preheat the oven to 175°C (347°F). Line two round cake tins with parchment paper.
  2. Mix Wet Ingredients:
    • In a large mixing bowl, combine dairy-free yogurt, maple syrup, nut butter, almond milk, and apple cider vinegar.
  3. Combine Dry Ingredients:
    • Fold in the gluten-free flour, vegan protein powder, baking powder, vanilla extract, and bicarbonate of soda into the wet mixture.
  4. Bake the Cake:
    • Divide the batter evenly between the prepared cake tins, spreading it out evenly.
